I’ve made this curry at home, and soaking the cashews properly really helps achieve a soft and creamy texture.

Ingredients for cashew curry
- 250g unroasted cashews
- 1 ½ tablespoons oil
- 2cm cinnamon stick
- 2 curry leaves sprigs
- About 3-4 pandan leaves
- ½ onion, sliced
- 4 garlic cloves, sliced
- 2-3 green chillies, sliced
- 1 teaspoon unroasted curry powder
- 1 teaspoon turmeric
- Salt to taste
- 1 cup water
- 1 cup coconut milk

Method

- Add water until the cashews are about 1-2 inches above the bowl (At room temperature). Cover and soak for at least 6–8 hours (or overnight). Note: You can split the cashews in half before soaking if you wish.
- Add water till it is about 1 -2 inches above the level of the cashew nuts.
- Drain off the water from the cashews, then set them aside.
- Put oil in a saucepan and heat over low heat.
- Add cinnamon, curry leaves, pandan leaves and onion. Cook until onion is translucent. Continuing to stir can prevent the onions from burning.
- Add garlic and chillies. Cook for 2 minutes.
- Add curry powder, turmeric and salt. Cook, mixing well, for about 30 seconds. Constant stirring can prevent the onions from burning.
- Add the soaked cashews and stir until well mixed.
- Add water. Cover and cook for about 20 minutes. Checking periodically can ensure that there is enough liquid in the saucepan. Add water if needed. Also take a cashew or two and check if they are cooked. This might take less or longer.
- Add coconut milk.
- Cook until the cashews soften and easy to break. Stir occasionally.
Serve with rice.
