Easy Sri Lankan Hoppers Recipe – Crispy Homemade Appa

This easy Sri Lankan hoppers recipe shows you how to make crispy homemade appa with soft centers and golden edges using simple pantry ingredients.

The best part is that you don’t need eggs to make these soft-centered homemade hoppers. With the correct batter consistency and a properly seasoned hopper pan, you can easily make beautiful hoppers at home ❤️

Today I’m also sharing my simple hopper pan seasoning method that helps homemade appa release easily every time ☺️

For me, homemade hoppers always remind me of slow weekend breakfasts at home 😍 They’re especially comforting when served hot with coconut sambol or chicken curry.


⏱️ Prep Time: 15 mins
⏳ Ferment Time: 1–2 hours (depending on room temperature)
🔥 Cook Time: About 4 mins per hopper
🥥 Serves: 4–5


🧾 Ingredients

  • 300g rice flour
  • 300ml coconut milk (or as needed)
  • 2 tsp sugar
  • 1 tsp yeast
  • 1/8 tsp appa soda
  • 150ml coconut water
  • 1 Marie biscuit
  • Salt to taste

💡 If You Can’t Find Coconut Water

You can use slightly warm water instead, but coconut water gives a better flavor and helps create a softer center.


👩‍🍳 How to Make Hopper Batter

✅ Add the rice flour, sugar, yeast, and crushed Marie biscuit into a large bowl.

✅ Pour in the coconut water and mix everything by hand.

✅ Gradually add the coconut milk while mixing well until there are no lumps.

💡 Using slightly warm water when preparing the coconut milk helps the yeast activate faster.

✅ The batter should not be too thick or too watery. Try to keep it at a smooth pouring consistency.

✅ Cover the bowl well with plastic wrap and leave it in a warm place for about 1–2 hours.

✅ After some time, you should see small bubbles forming in the batter.

✅ If there are no bubbles yet, allow it to ferment a little longer.

✅ Add the appa soda and salt, then mix well.

✅ If the batter becomes too thick, add a little extra coconut milk (about 50ml) to loosen it slightly.

🔥 How I Season the Hopper Pan

✅ Heat the hopper pan well.

Once heated, add a little oil and spread it around the pan using a clean cloth.

✅ (Optional seasoning trick) Crack an egg into the pan and cook briefly.

Then spread the egg around the pan using a spoon before removing it.

✅ Wipe the pan clean using tissue paper.

💡 This simple method helps season the pan properly so the hoppers turn out smooth and non-stick.

🥥 Let’s Make the Hoppers

✅ Lightly grease the pan again using the cloth with a little oil.

✅ Keep the stove on the lowest heat level.

✅ Heat the pan gently.

💡 If the pan becomes too hot, the hopper shape will not turn out properly. Sometimes I let the pan cool slightly between hoppers.

✅ Pour one ladle of batter into the center of the pan.

Quickly lift and rotate the pan so the batter spreads around the sides.

✅ Cover with the lid and cook for about 4 minutes.

⚠️ Do not open the lid during this time.

Cooking time can vary slightly depending on the stove heat.

✅ Always keep the flame low.

✅ Lightly grease the pan from time to time between hoppers.

Otherwise, the hoppers may start sticking to the pan.

✅ Always stir the batter before pouring each hopper.

This helps keep the consistency even.
