Coconut Sambol (Pol Sambol) – Easy Sri Lankan Recipe

This is one of the easiest Sri Lankan side dishes you can make at home. I have made this many times, and it always turns out fresh and flavorful with just a few simple ingredients. Coconut sambol and rice is something I can eat three times a day without ever getting tired of it… but… only under a few conditions 😁

What are those conditions? 👇

No matter how the sambol is made, I need to feel small pieces of dried fish (umbalakada) in every bite.
The rice has to be white rice (sometimes I eat red rice… but I don’t really prefer it ☹️).
The rice should be hot and steaming.
And finally… to enjoy this properly, there should be something else that goes well with it 🙈👇

From my experience, when all these come together, even a simple meal tastes amazing.


🍛 What I Like to Eat With It

  • Dried fish or sprats cooked with oil
  • Dried fish or sprats fried until crispy
  • Fried potatoes
  • Young jackfruit curry
  • Fried fish
  • Fish ambul thiyal
  • Spicy fish curry
  • Potato and sprats curry (thick style)
  • Spicy dhal curry
  • Boiled eggs
  • Egg omelette
  • Fried eggs
  • Cooked soya meat
  • Fried papadam and green chilies

Honestly, even if I have just one thing from this list… the meal becomes next level 🔥

Fried fish or something like Fish Ambul Thiyal goes really well with coconut sambol.


🍽️ Simple Serving Ideas

  • Serve coconut sambol with hot rice
  • A little squeeze of lime juice makes it taste fresher
  • If you like spicy food, you can add extra chili
  • It even goes well with bread for breakfast

🥥 My Favorite Coconut Sambol

When it comes to coconut sambol, my favorite version is made with green chilies, red onions, garlic, finely chopped tomatoes, a good amount of dried fish, a little coconut vinegar, and freshly grated coconut.

I mix it by hand, using the white part of the coconut.

That version is really delicious for me..😉 I’ve made this many times at home, and it never fails.

Traditional Way (Wangediya Method)

I have to say this… the real taste of coconut sambol comes when it is made using a mortar and pestle 😍
It’s a bit of an old-school method… but the result is amazing 🔥

🌱 Ingredients:

  • 1 cup freshly grated coconut
  • 5–6 dried red chilies (or 2 tbsp chili powder)
  • 4–5 red onions
  • 1 clove garlic (optional)
  • Salt and lime juice
  • A little dried fish (if available)

🥣 Method:

  1. First, grind the dried chilies and salt well
  2. Then add onions and dried fish, and crush until slightly chunky
  3. Add grated coconut and mix everything together gently (don’t over-grind the coconut)
  4. Finally, transfer to a bowl, add lime juice, and mix well by hand

From my experience, this method gives a deeper flavor to the sambol.
