There’s nothing quite like a warm cup of masala chai, especially in the morning or during a quiet evening. The aroma of spices, the creamy texture, and the comforting warmth make it a simple but satisfying drink.

I’ve made masala chai many times at home, and adjusting the spices slightly each time really changes the flavor in a good way.


What is Masala Chai?

Masala chai is a traditional spiced tea made by brewing black tea with milk, sugar, and a mix of spices like ginger, cardamom, and cinnamon.

Different homes prepare it in slightly different ways, which makes every cup a little unique.

  • Made with black tea + milk + ginger, cardamom, cinnamon, and cloves.
  • This is the traditional type that is usually drunk the most.

2️⃣ Ginger Masala Chai

  • The amount of ginger used in this is more. (That’s the only difference).
  • Good for colds and coughs (because more ginger is used).
  • Has a warm taste.

3️⃣ Cardamom Masala Chai

  • The cardamom flavor is more pronounced
  • The aroma and soft taste are very good

4️⃣ Cinnamon Masala Chai

  • For those who like cinnamon flavor (add more cinnamon)
  • Good for blood sugar control

5️⃣ Black Masala Tea (Milk-free)

  • Spices + black tea without milk
  • Low in calories
  • Also used as a detox tea

6️⃣ Kashmiri Masala Chai

  • Nuts like almond / pistachio
  • Scented spices + pink color tea
  • Creamy & rich taste

7️⃣ Tulsi Masala Chai (Herbal Masala tea)

  • Tulsi (Buduruvel) + spices
  • Good for boosting immunity
  • Low in caffeine

8️⃣ Chocolate Masala Chai

  • Add Cocoa powder. (as needed)
  • For those who like sweet and spicy (kids love it a lot)

9️⃣ Iced Masala Chai

  • Masala chai + ice
  • A refreshing drink for hot and humid weather

🔟 Vegan Masala Chai

  • You can use Soy milk, Almond milk, Coconut milk instead of cow milk.
  • Good for those with lactose intolerance

Ingredients You’ll Need for Masala Chai Recipe


You can slightly adjust the amount of ginger, cardamom, or cinnamon depending on how strong and spicy you like your tea.

  • 4 cloves
  • 2 cardamom pods
  • 1⁄2 teaspoon ground cinnamon
  • 1⁄4 teaspoon ginger
  • 1⁄8 teaspoon black pepper
  • 2 teaspoons strong black tea leaves
  • 2 cups milk
  • 1 cup water
  • Sugar to taste
  • A pinch of vanilla

How to make a Masala Chai


  • Grind the cloves, cardamom and cinnamon.
  • Add the chopped spices, pepper, ginger and water and bring to a boil.
  • Turn off the heat, cover with a lid and let sit for about 5 minutes.
  • Don’t worry if the color looks a little darker or lighter at this stage. That usually depends on how long you let it boil and how much milk you use.
  • Add vanilla and tea leaves and remove from the heat.
  • Cover with a lid and leave for about 3 minutes, strain and serve in cups.
  • You can thicken it by adding a little water (if needed).
  • Try making masala tea instead of the milk tea you make every day.

From my experience, letting the spices simmer first before adding milk gives a deeper and more balanced flavor.

  • Use crushed spices – Freshly crushing cardamom, cloves, and cinnamon can enhance the aroma.
  • Use fresh spices when possible
  • It tastes better if you add fresh milk or canned milk.
  • If you add canned milk, there is no need for sugar.
  • Boil the spices in water first – Boil the spices for 3–5 minutes before brewing the tea.
  • Use fresh ginger – It has more flavor & health benefits than powder.
  • Adjust milk and sugar to your taste
  • Add milk at the end – If you add milk and boil it first, the taste will be reduced.

  • Using honey / jaggery (pani) instead of sugar is a healthier option.
  • Using low-fat milk or plant milk (soy / almond) can reduce calories.
  • Reduce the amount of pepper (if you have gastritis) to reduce stomach irritation.

🕒 Storage Tips


  • Masala mix (dry) can be stored in an airtight bottle for 1–2 weeks.
  • Drink fresh chai within 2–3 hours of making it (best taste).

Avoid these things


  • Don’t add too much powdered spices (it will get too hot)
  • Don’t close the lid while boiling (it will boil over)
  • Don’t add cold milk directly to boiled tea (it may split)
